another super easy dessert, cannoli filling with berries 🙂

you can very easily just make cannolis out of this, but i don’t know where to get those shells… and whenever i eat a cannoli it just makes a mess. so i prefer the bowl and spoon method 🙂 feel free to top with whatever you like – chocolate chips, pistachos, other types of fruit, crumbled cookies, possibilities are endless 🙂

since trader joes opened up RIGHT NEAR MY OFFICE (!) i’ve been going at least once a week and i get all of my food there. even my salt and pepper shakers.  so all the measurements are based on TJ packaging… i’m not sure if theirs is different than other stores, but that’s my disclaimer.

start off with 1/2 a container of ricotta cheese – 7.5 oz.

add half a container of mascarpone (mas-car-ponAY) cheese (4 oz) and about 1/4 cup sugar.

stir well. taste. if its not sweet enough for you, add a couple tablespoons of powdered sugar (i like the meltiness of powdered sugar). also stir in about 1/2 teaspoon vanilla extract if desired. i used bourbon vanilla extract. mm.

cover and chill while you make your dinner, or watch tv, or whatever. it just tastes better after it sits.

meanwhile, wash and chop up some berries and toss in some sugar if you’d like (obviously, i like things super-sweet). let them sit and get nice and glossy.

when ready to serve, simply dollop some of the cannoli cream on the berries and eat! its SO good.

cannoli cream

7.5 oz ricotta

4 oz mascarpone cheese

1/4 cup sugar

2-4 tablespoons powdered sugar (to taste)

1/2 teaspoon vanilla extract (or extract of your choice)

toppings (fruit, chocolate, cookies, nuts, etc)

  1. mix ricotta, mascarpone and sugar.
  2. add powdered sugar and extract to taste.
  3. chill for at least 30 min.
  4. serve with your choice of toppings!
