everyone’s childhood favorite dish was broccoli and cheese, right? πŸ™‚ just kidding. although, it was one of my favorites… but that’s because i’m a “mouse” and love cheese. this is a fancy version of the traditional broccoli and cheese. very posh, but very easy and very yummy πŸ™‚ it’s made with white wine (any kind you would drink) and good parmesan cheese.

absurdly simple side dish or quick snack when you want some greens.

just coat a pan with some olive oil over medium heat and throw in some broccoli florets.

toss and cook for about 2 minutes, then pour in a little bit of water (carefully!) to steam and fully cook the broccoli. raise heat to high.

cover with any lid you have that will keep any steam from escaping.

check periodically for doneness. should be a little underdone from what you like it because it will cook a bit more in the wine.

drain off any extra water, and it should look something like this:

now time for the wine πŸ™‚ i used a riesling that i had on hand in the fridge. make sure to use wine you would drink and not cooking wine. don’t be cheap πŸ™‚ you’ll only need a couple tablespoons.

carefully pour a bit into the pan.

along with a handful of good parm (preferably not kraft) and some dried herbs if you want. i used oregano, basil, thyme. and some black pepper.

here, i also decided to add some haricot verts since i had them lying around and i put too much wine in the pan πŸ™‚

stir, and let it reduce. you can toss it around every so often to make sure the sauce gets into the florets.

before you know it you’ll have some fancy-shmancy wine cheese sauce πŸ™‚
