a yummy way to jazz up a 69cent box of jiffy cornbread mix! with fresh jalapeno, pepper jack cheese and a surprise ingredient.
not really anything special, but i took pics so thought i’d share π
use the basic recipe – mix plus 1 egg and 1/3 cup milk. add in 1 chopped jalapeno (remove the seeds and veins if you want it to be mild), a very full 1/3 cup shredded cheese of your choice and 2 tablespoons of cottage cheese. the cottage cheese helps with the texture π makes them more moist.
mix, but dont overmix.
let it sit for about 5 minutes and then fill greased muffin cups about 3/4 full.
slide into a 400 degree oven until puffed and golden.

jalapeno easy cheesy corn muffins
1 box corn muffin mix (this is the easy way out π )
1 egg
1/3 cup milk (not skim)
1 jalapeno, minced
2 tablespoons cottage cheese
heaping 1/3 cup freshly grated pepper jack or cheddar cheese
- preheat oven to 400 degrees and grease a muffin pan.
- mix all ingredients just until incorporated.
- let sit for 5 minutes.
- fill muffin cups 3/4 full and bake until puffed and golden.
I love cornbread but I’m excited now to see what it’s like with cheese and jalapenos!!
Can you substitute sour cream for the cottage cheese?
